It turns out the vegetables are green beans (haricots verts in French) indeed.
But the photo is misleading: what looks like chicken nuggets is not poultry meat but frog legs.
The taste of the frog legs themselves can be a bit bland, somewhere between chicken and white fish, that's with the parsley and garlic coating is so important. The meat is lean, white and perfectly tender, with a texture similar to chicken wings, with a sweet flavour.
Preparing frog legs "en persillade" takes a long time, some would rather eat them in a restaurant than at home.

I have never tasted frog legs nor do I know of any place here that serves them. These Americans are too closed minded to taste anything they consider weird.

There are many species of frogs. This must be a particular specie. Not all frogs are edible, and some are poisonous.

Tonight, I'm going to present another recipe.

What you see here is a wild boar roast (rôti de sanglier in French).


This rôti was cooked in a stockpot for 40 minutes. The vegetables are not overcooked: they were simply browned and cooked in the meat juice.

The wild animal, thus scathingly referred to, turns out to be an excellent dish: wild boar meat has a robust and gamey flavor compared to the milder taste of pork. Its meat is also considered leaner and healthier, which is attributed to the animal's diet, which consists of a variety of natural foods like roots, nuts, and berries. In France, it's pretty difficult to find this kind of meat in a regular grocery store, and it's also more expensive than a mere pork roast. "Rôti de sanglier aux petits légumes" is certainly a perfect dish for the guests of Vasudev, humbert and shadow.97.

Perhaps surprisingly, this is not very hard to find here. it's found in most well sorted grocery stores.

May be due to our large ranges of forest and hunting grounds. Last year, 2024, it was legalised for hunters to sell their own meat, making this easier to obtain. My favorite meats are all wild- "grown". Like deer, boar or hare.

I didn't think that wild boars were living in Sweden due to the cold climate. They certainly have comfortable burrows to spend the winter.

I would guess there's got to be some control with respect to hunting wildlife. If they're allowed to see their own meat, what's to stop a hunter from taking out an entire herd of reindeer for profit?

This is a pâté de campagne (and not champagne...). It can be roughly translated as "country pâté". There is no champagne in it. It is a pâté made only from pork (the breast and the liver) and simply garnished with a mixture of garlic, onion, shallots and some fresh herbs.
As for the "black dust", the tapenade is a spread made from black olives.

After so many Christmases, it's just another day on the calendar as far as I'm concerned. Lisa Simpson couldn't have said it better: "Christmas is a day where people buy friends gifts they don't need, with money they don't have."
